There are two easy ways to do this:
1. Loosen the screw that holds it on the pin. The pin in question is a splined shaft. Reset at a comfortable height and tighten the bolt.
2. The way I did it on mine, was to put it in 5th gear, put my foot under it and pull up. As long as the bike is not running the lever will bend. Be conservative, it's easy to break.
